As the days get warmer my kids tend to crave cooler things like smoothies and yogurt. Lately I’ve been whipping up an easy and healthy breakfast for my oldest that’s packed with protein. The best part is one, it’s easy, and two you can make batches and serve it throughout the week! He has this for breakfast or as an afternoon snack. It doesn’t take a rocket scientist or a ton of time for this one! Keep scrolling for the easy recipe.

Ingredients
1 1/2 cup Fresh Strawberries
1 Fresh Banana / optional
1/2 Tsp Vanilla Extract
1 Cup Greek Plain Unsweetened Yogurt
1 Small Scoop Protein Powder

Step 1
Wash your strawberries and cut off tops. I slice mine into quarters. If you’d like to add bananas you can slice a whole ripe banana. Sometime I add and sometimes I don’t, just depends if I have a ripe banana around!
Make sure your strawberries are dry and add to a high speed blender or food processor and blend. Next add the rest of your ingredients. Blend till smooth and store in a container. This will last 5 days refrigerated.

I like to add a protein powder for my oldest son as he’s very very active. He plays every sport under the sun and still, at 11 years old, doesn’t eat many vegetables. Lawd help me!

And there you have it! Easy peasy and oh so yummy & healthy!
