A Delicious Summer Berry Galette

Summer calls for fresh dishes made with the season’s best fruits! Growing up my parents grew boysenberries in our backyard and they would grow like crazy in the summer. Using them, my Mom would make a delicious berry galette. FYI, my mom is an amazing cook! She continues to make this yummy treat to this day every summer. It’s the yummiest treat, best served with vanilla ice cream in my opinion. This is such a great dessert that’s easy and definitely a crowd pleaser! See the recipe below!

Ingredients

Pie Crust
My mom is the queen of yummy but also smart! She keeps it simple with the Pillsbury Pie Crusts. They are so good and easy, which is a win in any Mama’s book!

Filling
4 Cups Mixed Berries, you can use Boysenberries, Blackberries, Raspberries, Blueberries, Strawberries, you name it!
3 Tablespoons Sugar
1 Tablespoon Cornstarch
Squeeze the Juice of 1 Lemon

Topping
2 Tablespoons Butter
Sprinkle of Sugar

Directions
Roll out the pie Crust on a baking sheet on top of parchment paper
Add the fruit mixture in the middle and give yourself an 1.5” around the dough
Take the pie crust and fold over the fruit along the edges
Add an egg wash on the crust and sprinkle sugar.  Then add 2 pads of butter and sugar on top of the berry mixture
Bake at 400 for 15 to 20 minutes or until crust is golden

Trust me you will love this dessert and like I said, it’s even better served with vanilla ice cream, yum!!! Enjoy!
