Let’s put a twist on the classic spring brunch cocktail! We’re taking the traditional mimosa and adding some new and fun flavors. In my opinion, carrot juice goes well with any fruit. Today, we’re using carrots, strawberries, oranges, and coconut to create this festive spring drink. The best part is that this cocktail is yours to customize. You can adjust the proportions to your liking – add more strawberry than orange, or maybe just a splash of carrot. This is just my version, as I never make the same cocktail twice. It’s always a little different, which makes it fun. So, let’s create this fun spring cocktail that you and your guests will love for all your spring celebrations this month.

Carrot Orange Strawberry Mimosa
Ingredients
- 1/4 cup Fresh carrot juice
- 1/4 cup Fresh squeezed orange juice
- 1/8 cup Strawberry puree stawberries blended
- Coconut cream to taste
- Champagne
- Edible flowers
- Mini carrots
Instructions
- Gather all juices together and put into a cocktail shaker. For the strawberry puree, all you need to do is just blend the stawberries in a blender. I love to make a batch a week for smoothies, salad dressings, and drinks.
- Put a dollop of coconut cream in as well. Now, shake that baby up!
- Pour into a glass of your choice. Top with champagne, and garnish with edible flowers and mini carrots. Enjoy!
