This delectable frozen dessert features the vibrant citrus flavors of freshly squeezed clementines and oranges, harmoniously blended with the delicate sweetness of honey and a hint of orange liqueur for an extra layer of richness. CAN I CHANGE UP THE CITRUS?
Absolutely! I have used both clementines and tangerines, and you could use all types of oranges as well. Feel free to experiment with different citrus combinations to find what you enjoy. Additionally, you can substitute fresh pineapple juice for orange juice, which sounds like a delicious combination.

FRESH SQUEEZED OR CAN I BUY STORE BOUGHT?
You should take a few extra minutes and opt for freshly squeezed juice. You know you are getting genuinely freer in taste. So fresh all the way!

Ingredients

  • 4 clementines
  • 250 ml orange juice fresh
  • 60 ml honey or agave syrup
  • 60 ml orange liqueur

Instructions

  • Start by cutting the clementines in half. You can either use a juicer or scoop out the flesh. I prefer using an electric juicer because it gets all the flesh out, leaving a perfect clementine bowl to scoop the sorbet into. Don't throw the skins away!
  • Add 250 ml of orange juice to give you 500 ml of juice.
  • Take the juice and heat gently in a small pan along with the honey. Stir until all the honey is dissolved.
  • Next, we are going to add the orange liqueur and stir well. Then we want to chill it completely in the fridge.
  • Pour the juice into a shallow metal tin and freeze until firm. Then, rake over with a fork to get the crystals. Repeat this several times until the juice is all mixed up and frozen.
  • Lastly, spoon the sorbet into the reserved clementine shells and refreeze till required. Zest a bit of citrus on top and serve right away!
