Yes, a pink pineapple!
This pink pineapple mojito is a summer sippin’ drink that you need to serve up to your besties asap. When I saw this pink pineapple at the market, it just screamed to be put into a cocktail. I love this time of the year, it’s where all the tropical fruits are perfectly in season. I’m a tropical fruit junkie, so adding this pink pineapple into my summer drink rotation was a dream. Unquestionably, pineapple and mint are a match made in cocktail heaven.

WHAT YOU WILL NEED FOR THIS PINK PINEAPPLE MOJITO
Pink Pineapple. If you can’t find a pink pineapple, don’t fret. Just use the OG.
Fresh Mint. Now, this is where you have options. I went with a mix of mojito and pineapple mint. Grow them in your yard, and you will have mint all year long. Also, I highly suggest you try to find some at your local nursery. The pineapple mint smells so good! But, any mint will do if you are limited to what’s available at the store.
Limes. Fresh limes, no bottle juice- pretty please.
Ginger Ale. Switching it up and using ginger ale instead of soda water. It adds a nice sweetness to the mix. Additionally, you can use ginger beer too.
White Rum. Use a good white rum, you will be happy you did.
CAN YOU MAKE THIS AHEAD OF TIME?
YES! You can absolutely make this mojito recipe AND even make it into a pitcher for large groups. The best part is all the flavors hang out together and become all the more delicious. Plus, who wants to keep making a cocktail at a time? Also, wait to add ice and top everything off with the ginger beer and garnishes when ready to serve. Yum!
Pink Pineapple Mojito
Ingredients
- 1 pink pineapple cubed up, and some sliced for garnish
- juice of 1 lime
- 1 lime sliced, save some for garnish
- 2 shots of white rum
- 1 can of ginger ale
- 1 bunch of mint
- ice to serve
Instructions
- Take a couple slices of lime, a handful of cubed pineapple, and a couple sprigs of mint and muddle all together in glass or cocktail shaker. Give it a good beating.
- Add the lime juice and rum to the glass or shaker. Stir to combine. Pour into a glass and add ice. Top off with ginger ale, and add some fresh cubed pineapple, mint, and some lime slices.
