Your Thanksgiving dessert, solved.
It’s that time of the year, time to nail down that Thanksgiving menu. Each year, I try to invest some time into thinking about new dishes to add to the menu. Some are hits, and then there have been times when that dish was never talked about again in our house. I like to blame my non-veggie lovers that I live with. But luckily, there are no vegetables in this dish, so I think I’ll be safe this year. Plus, there is sugar and apples, so it’s definitely going to be a hit. These little cuties are packed with yummy apples, sugar, cinnamon, and of course some butter. You can also sub in another fruit too if apples aren’t your jam. These sweet mini galettes are super easy to make, and you can also make ahead of time. A dessert you can make ahead of time prior to a big holiday gathering, I’m all here for it.

ALL THE SWEET FALL INGREDIENTS
Here’s what you’ll need to make these mini apple galettes:
Homemade crust or store bought?
If you love baking, then I say do the homemade crust, only a couple ingredients and it’s not a huge mess. But if you don’t call yourself a baker, then by all means go for the store-bought dough. Cause hey, it’s Thanksgiving and you are making a million dishes. No judgement here at all!
Apples. Any sweet red apple will do the trick. I used gala apples.
Sugar. When baking, I like to use baking sugar. It’s a finer coarse sugar.
Brown sugar, cinnamon, and butter. These staples round everything together in the flavor department to create that lovely fall flavors.
HOW TO MAKE THESE MINI APPLE GALETTES
(it’s easy, promise!)
FIRST, MAKE THE CRUST. (skip if you bought store-bought)
In a bowl, combine the flours with the butter, sugar and a pinch of salt. Quickly work the ingredients until you get big crumbs (large as big as a pea). Gradually add the cold water, just enough to get a smooth and soft but not sticky dough. Wrap the dough in plastic wrap and place it in the refrigerator for at least an hour.
ROLL OUT THE DOUGH, AND ARRANGE.
Roll out the dough on the floured pastry board in a 3-4 mm thick rectangle. Cut out discs about 12 cm in diameter, stuff them with sliced apples and close the edge towards the center. Roll out the scraps of dough and make other discs.
TIME TO BAKE.
Turn on the oven at 220° and in the meantime keep the mini galettes in the refrigerator. When the oven has reached the temperature, bake the pan and bake the galettes for about 15 minutes at 220°C, then lower the oven to 190°C and bake for another 20 minutes or so. The mini galettes will have to be well browned. Remove the apple mini galettes from the oven and let them cool before serving
Mini Apple Galettes
Ingredients
- 150 g 00 flour
- 150 g flour
- cold water
- cinnamon and brown sugar for finishing
- 1 Tablespoon sugar
- 200 g butter cold and cut into cubes
- 6-8 gala apples
- 1 pinch salt
Instructions
- In a bowl, combine the flours with the butter, sugar and a pinch of salt.

- After this time, roll out the dough on the floured pastry board in a 3-4 mm thick rectangle.

- Arrange the galettes on a baking sheet lined with parchment paper and sprinkle with a mix of brown sugar and cinnamon.
- Turn on the oven at 220° and in the meantime keep the mini galettes in the refrigerator.
