A Carrot Mexican Mule Cocktail

TGIF! Easter is just a hip hop away, and I’m sure you are gathering your menu together just like us. This year, I picked a festive cocktail to serve up. Meet the Mexican carrot mule! Not only is it super festive for Spring with its vibrant sweet carrot juice, but add in the flavors of the ginger beer and fresh rosemary and lime juice to round this cocktail out! Serve this up on Easter Sunday with an egg dish, fruit, and salad, and you have yourself a fun Easter brunch!

CARROT MEXICAN MULE
serves: 1 cocktail

W H A T   Y A   N E E D
2-4 oz. fresh carrot juice
4 oz. ginger beer
2 oz. tequila
1/2 oz. fresh lime OR orange juice (I like both)
Fresh rosemary sprig

B U S T   O U T
Cocktail shaker
Pretty glassware


I N S T R U C T I O N S
Let’s take our cocktail shaker and fill it with some ice. Now, pour in the tequila, fresh lime juice, and carrot juice. I like a lot of carrot juice, so I tend to add more. And I like to add in some fresh orange juice as well, it adds a nice sweetness to it. Add in the rosemary sprig. Then shake, shake, shake. Pour into a glass filled with ice. Then pour the ginger beer in to fill to the top. You can garnish with a fresh sprig of rosemary or, even better, baby carrots!
