A Pink Tropical Citrus Salad for Beautiful Skin

Enjoying the last few weeks of summer and indulging in all this summer’s yummy fruit! I’m a huge lover of tropical fruit and citrus! And even more, knowing that not only is it super yummy but it’s also good for you! These glow-enhancing fruits are wellness staples in helping you achieve clear and bright skin. Fruits like papaya and citrus contain antioxidants, Vitamin A, Vitamin C, essential fatty acids, and zinc. So let’s indulge in all these yummy fruits and get that clean, bright, and healthy skin we all love to have!

TROPICAL CITRUS SALAD
SERVES: 2-4 | PREP: 10 MINUTES | COOK: 0 MINUTE

W H A T   Y A   N E E D

Orange
Lemon
Blood orange
Kumquats
Papaya
Radish
Pickled Shallots
Honey
Mint to garnish

PICKLED SHALLOTS

2.5 oz shallots about 2 medium
⅓ cup water
⅓ cup red wine vinegar
¾ tsp salt
¾ tsp sugar

What’s so great about this salad is how easy it is to assemble! Peel and slice all your citrus and radishes. I like to do a quick pickle for my shallots. To do this, boil apple cider vinegar, salt, water, and sugar. Once boiled, please take off the heat and put it into a jar of any sort with a lid. Place your sliced shallots in the jar as well. Let it cool to room temperature, and then place in the fridge. Once cooled, place a couple of slices onto your citrus and radish mix. Let’s make up a fast and easy dressing! Take another jar, and throw in some lemon juice, a couple of sprigs of mint, and a small drizzle of honey. Shake away! Then lightly drizzle on top of the salad to bring out the sweetness of the citrus. There you have it!
