End of Summer S’more Ice Cream Cookie Sandwiches

Summer isn’t complete without a s’more session, or more then one! When you think of a summer essential, s’mores is definitely in the top 10. When my kids were little, I would take them out and create a little picnic for them by our fire pit. Well, that was short lived as they only enjoyed the roasting of the mallow. I would end up eating mine and both of theirs, which I’m not complaining at all.

I tried a few more times thru the years thinking they would finally accept thier love for the s’more. I mean it has to be in their blood, both my husband and I will never turn down a s’more. Finally, this summer I found the answer! Well, I will give part credit to my husband who got them to love an it’s it. So I took that concept and ran with it. It may not be a true traditional s’more, but I’ll take what I can get.

This is the love child between an it’s it and a s’more. One end of the summer treat the whole family will enjoy! The best part is you can create a little setup where you provide choices of cookies and ice cream flavors.


S’MORE ICE CREAM COOKIE SANDWICHES

W H A T   Y A   N E E D!
Cookies (your choice of flavor)
Abby’s choice: Chocolate Chip, Oatmeal, and double chocolate chip
Ice cream (your choice of flavor)
Abby’s choice: Mint chocolate, Mascarpone berries, and roasted strawberry
Large Marshmallows

B U S T   O U T:

Plastic wrap
Ice cream scoop
Culinary torch


I N S T R U C T I O N S
Not every recipe I do has to be so involved and have a thousand ingredients. I do love a complicated dish, but easy ones are just as fun and satisfying, especially with our busy schedules. I went to my local Whole Foods and picked up all the ingredients.
Pick your choice of cookies and ice cream. Place a sheet of plastic wrap on your counter. Place one cookie down on its “back,” and then place a big scoop of ice cream on top. Place the other cookie on top. Wrap it up and place in the freezer until well firmed, about an hour.
Then when ready to serve, open up the sandwich and place a large marshmallow on top. Using your culinary torch, roast the mallow. The ice cream may start to melt, but that’s ok, it’s not a clean dessert. Then place the cookie back on top, and serve right away!
You may think to put the ice cream sandwich back in the freezer, so the ice cream isn’t melting cause of the hot mallow, but the marshmallow will be hard if you go that route. And, that isn’t fun to bite into a hard, sticky sandwich.
