Let’s chat. Are you a morning person? Or is morning a legit struggle bus for you? I like to say I’m 50/50. Some mornings, I wake up at 5 a.m, ready to rock the day. Shove those kids off to school, and start my day. Other days, not so much. Regardless, breakfast in the morning is essential for me. Breakfast has to be fast, yummy, and healthy. So here you go! Sweet ripe peaches with fresh ricotta spread, drizzled honey, and a sprinkling of crushed pistachios make one yummy breakfast peach toast that you will have ready in less then 2 minutes.

Let’s do this in less than 2 minutes! Toast your bread; I like to use sourdough for this one. It’s sturdy enough to hold the peaches on top. Once toasted, spread some ricotta on top. Then layer your sliced peaches. Lastly, sprinkle some crushed pistachios, followed by a drizzle of honey. I like to also sprinkle some finishing salt on top.
