It is Monday, and I’m already looking for Friday! This past week brought us a lot of heat here in NorCal, and it is giving me all the summer vibes! So today, I’m pretending we are on vacation while sipping on this fun and bright berry cocktail. Equip with a yummy strawberry simple syrup and smashed kiwis, and we have ourselves one fun cocktail!

I WISH I WAS ON VACATION STRAWBERRY-KIWI COCKTAIL

4-5 cups strawberry simple syrup
4-6 kiwi, sliced
1-2 cups strawberries, sliced
4 cups berry-flavored vodka
1 bottle of prosecco
I N S T R U C T I O N S
Let’s start with making the strawberry simple syrup. Combine 2 cups sugar and 2 cups water with 2 cups chopped strawberries in a saucepan. Allow to simmer on low heat and stir until sugar is dissolved for about 10-15 minutes. Strain liquid and allow to cool before using.
Now that we have the simple strawberry syup, let’s add the kiwi, strawberries, and vodka. Stir until combined. Place the pitcher in the fridge for at least 4 hours or overnight. When ready to serve, pour in prosecco. Cheers!
