Summer Eats- Dragon Fruit Breakfast Bowl

I’m someone that doesn’t eat a big breakfast in the morning. I mean really what Mom has time to eat?  The mornings usually consist of fruit and a guava green tea that I love. When it comes to my fruit faves, it’s tropical all the way. I discovered dragon fruit not too long ago, and I’m totally obsessed with it. If you haven’t seen a dragon fruit, you are missing out! Its is probably one of the coolest looking fruits around. It’s part of the cactus family, which explains why I love it so much. Us Beijos ladies and our love for anything cactus. It is hot pink on the outside, and a white and black speckled flesh on the inside. With summer mornings being hot ones, this has been on the menu in our house a lot lately. It’s fast, easy, healthy, and the kids love it!

Hint: This is a perfect brunch item. Your guests will love it! Shhh… don’t tell them how easy it is.

Dragon Fruit Breakfast Bowl

Serves: 1-2 (depending on your appetite)

Ingredients

 1 Dragonfruit
1/2 cup of assorted fruit (I used berries this time around cause that is what was in my fridge at the time. )
Melon scooper
*When picking out a dragonfruit, look for one with bright and even colored skin. Blotchy spots are a no no. It should be soft, but not mushy. Make sure your fruit is COLD. Fruit tastes so much more refreshing when it’s cold. If you are serving these bowls at a later time, just assemble and then take out right before serving. Probably best to assemble no more than an hour or two before serving.

Directions

Slice your dragon fruit in half. Using your melon scooper, scoop out most of the dragonfruit. Then add in your fruit of choice and the dragon fruit balls. Lastly, insert a spoon and demolish!
